Ingredients

  • 1 3/4 cups half and half or light cream
  • 3 tablespoons sugar
  • 1 tablespoon cornstarch
  • a dash of salt
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a 2-quart saucepan, combine half and half or light cream, sugar, cornstarch, salt, and egg yolk.
  2. Cook over medium heat, stirring constantly, until mixture coats a spoon well, about 15 minutes. Do not boil.
  3. Remove custard from heat.
  4. Stir in vanilla extract.
  5. Pour into a bowl and press plastic wrap directly onto surface to prevent skin from forming as it cools.
