Ingredients

  • 3 to 4 qt. popped corn
  • 1 cup peanuts
  • 1/2 cup butter or margarine
  • 1 cup firmly packed brown sugar
  • 2 tablespoons white corn syrup
  • 2 tablespoons light molasses
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon water

Instructions

  1. Combine popped corn and peanuts in a large container and keep warm in a 250° oven.
  2. In a 2-quart saucepan, melt the butter.
  3. Stir in the brown sugar, corn syrup, molasses, salt, cinnamon, nutmeg, and water.
  4. Cook to 290° on a candy thermometer (hard-crack stage).
  5. Slowly pour the caramel mixture over the popcorn and nuts, stirring to coat evenly.
  6. Spread the mixture in a buttered 15 1/2 x 10 1/2-inch jelly roll pan.
  7. Return to the 250° oven and bake for 20 minutes.
  8. Stir the mixture after 10 minutes.
  9. Cool the caramel corn and break into pieces before serving.
