Dark Chocolate Parfait

Ingredients

  • 2 oz. unsweetened chocolate
  • 3 Tbsp. boiling water
  • 1 Tbsp. liquid artificial sweetener
  • 2 eggs
  • pinch of salt

Instructions

  1. In a blender, combine boiling water, unsweetened chocolate, liquid artificial sweetener, egg yolks, and a pinch of salt; blend for 1 minute.
  2. Beat egg whites until stiff, but not dry.
  3. Gently fold the chocolate mixture into the beaten egg whites until well blended.
  4. Chill the mixture for a few minutes while preparing whipped topping.
  5. Layer alternating chocolate mixture and whipped topping in parfait glasses.
  6. Chill until ready to serve.
