Date-Rice Pudding

Ingredients

  • 1 1/2 c. milk
  • 2 eggs
  • 2 Tbsp. honey
  • 1/2 tsp. salt
  • 1/2 tsp. nutmeg
  • 1/2 tsp. vanilla
  • 2 c. cooked rice
  • 1/2 c. chopped dates

Instructions

  1. Heat oven to 350°.
  2. Butter a 1 1/2-quart baking dish.
  3. Set aside.
  4. Heat milk in top of double boiler over hot, not boiling, water or in heavy saucepan over low heat.
  5. Beat eggs lightly in bowl; add honey, vanilla, 1/4 teaspoon nutmeg and salt.
  6. Slowly stir egg mixture into hot milk.
  7. Cook, stirring constantly, about 15 minutes or until mixture thickens.
  8. Remove from heat.
  9. Stir in rice and dates.
  10. Mix well and pour into baking dish.
  11. Sprinkle with remaining nutmeg.
  12. Bake 10 to 15 minutes or until custard is set. Makes 4 servings.
