Date-Rice Pudding

Instructions
- Heat oven to 350°.
- Butter a 1 1/2-quart baking dish.
- Set aside.
- Heat milk in top of double boiler over hot, not boiling, water or in heavy saucepan over low heat.
- Beat eggs lightly in bowl; add honey, vanilla, 1/4 teaspoon nutmeg and salt.
- Slowly stir egg mixture into hot milk.
- Cook, stirring constantly, about 15 minutes or until mixture thickens.
- Remove from heat.
- Stir in rice and dates.
- Mix well and pour into baking dish.
- Sprinkle with remaining nutmeg.
- Bake 10 to 15 minutes or until custard is set. Makes 4 servings.
