Ingredients

  • 3/4 cup sugar
  • 3 tablespoons Argo cornstarch
  • 6 cups fresh blueberries
  • 1 teaspoon grated lemon rind
  • 1 single crust pastry

Instructions

  1. Stir together 3/4 cup sugar and cornstarch in a bowl.
  2. Toss the mixture with 6 cups fresh blueberries and 1 teaspoon grated lemon rind until coated.
  3. Turn the blueberry mixture into a deep 1 1/2-quart casserole dish.
  4. Roll out the single crust pastry to be 1 inch larger than the casserole.
  5. Cover the filling with the pastry, flute the edges, and cut slits in the top crust.
  6. Bake in a 425°F oven for 30 to 35 minutes or until bubbly and the crust is browned.
