Ingredients

  • 1 1/4 lb. small baking potatoes
  • 9 egg yolks
  • 1 cup sugar
  • 2 teaspoons grated lemon peel

Instructions

  1. Boil unpeeled potatoes until tender, about 20 minutes. Drain and toss potatoes over low heat to dry completely.
  2. Peel the potatoes immediately and sieve to yield about 4 cups. Cool completely, cover, and refrigerate until needed.
  3. Preheat oven to 350°F. Butter and flour an 8 x 12-inch baking dish.
  4. Using an electric mixer, beat the potatoes, egg yolks, sugar, lemon peel, and cloves until light and fluffy.
  5. Spread the batter evenly in the prepared pan.
  6. Bake for 40 minutes until golden and set.
  7. Cool the cake completely, then dust with powdered sugar before serving with fresh fruit.
