A creamy broccoli casserole loaded with cheddar cheese and topped with cheese crackers, perfect for comforting family dinners or potlucks that enjoy rich, cheesy flavors.

Ingredients

  • 1 head fresh broccoli
  • 2 eggs
  • 1/2 cup milk
  • 1 can cream of mushroom or chicken soup
  • 1 cup mayonnaise
  • 1 cup shredded sharp Cheddar cheese
  • cheese crackers
  • 1/2 stick butter

Instructions

  1. Microwave or boil broccoli just to wilt.
  2. Combine eggs and milk in a bowl.
  3. Combine soup and mayonnaise in another bowl.
  4. Pour the egg mixture into the soup mixture and mix well.
  5. Stir in shredded cheddar cheese and cooked broccoli.
  6. Coat a casserole dish with nonstick spray and pour in the mixture.
  7. Top with cheese crackers and dot with butter.
  8. Bake until bubbly and golden on top.
