Ingredients

  • 6 large eggs
  • 1 (10 oz.) package frozen spinach
  • 1 Tbsp. sour cream
  • 1/4 tsp. salt
  • dash of nutmeg
  • dash of cayenne pepper
  • 2 Tbsp. mayonnaise
  • 1 tsp. prepared mustard

Instructions

  1. Peel the eggs and cut them in halves.
  2. Remove the yolks to a small bowl and set aside.
  3. Cook the frozen spinach according to package directions; drain thoroughly, pressing out excess water.
  4. Place the spinach in a blender or processor with sour cream, salt, nutmeg, and cayenne pepper; puree.
  5. Scrape down the sides of the bowl and blend a few more times if mixture is dry.
  6. Spoon the spinach mixture into a bowl and set aside.
  7. Use a fork or blender to mash the yolks with mayonnaise, mustard, and salt.
  8. Spoon the spinach mixture into each egg half.
  9. Pipe or spread the yolk mixture over the spinach-filled eggs using a decorating bag or fork.
  10. Sprinkle each egg half with paprika before serving.
