Delicious coconut macaroons with a light sweetness, perfect for diabetics or low-sugar diets. Crispy on the outside, chewy on the inside, these treats are easy to make and enjoyable.

Ingredients

  • 1 cup evaporated skimmed milk
  • 2 teaspoons granulated sugar replacement
  • 3 cups unsweetened shredded coconut

Instructions

  1. Combine evaporated skimmed milk and granulated sugar replacement in a large bowl, stirring until the sugar replacement dissolves.
  2. Add shredded unsweetened coconut; stir until the coconut is completely moistened.
  3. Drop by teaspoonfuls onto greased cookie sheets, spacing them 2 to 3 inches apart.
  4. Bake at 350°F (175°C) for 15 minutes, or until the tops are lightly browned.
  5. Remove from the oven and immediately transfer the macaroons from the baking sheet.
