  • 5 Tbsp. hot coffee
  • 4 eggs, separated
  • 1 tsp. rum

Instructions

  1. Into a blender, put the chocolate chips and hot coffee.
  2. Cover and blend on high speed until smooth.
  3. Add egg yolks and rum to the blender.
  4. Cover and blend on high for 5 seconds.
  5. Beat the egg whites in a large bowl until stiff peaks form.
  6. Fold the chocolate mixture into the beaten egg whites gently.
  7. Spoon the mousse into 8 parfait glasses and chill for 1 hour before serving.

Tips & Substitutions

For a richer chocolate flavor, consider using dark chocolate instead of semi-sweet. If you want a non-alcoholic version, simply omit the rum or substitute with vanilla extract. Ensure your egg whites are at room temperature for better volume when beaten. Use a gentle folding technique to keep the mousse airy.

Serving Suggestions

Serve the mousse in individual parfait glasses for an elegant presentation. Garnish with whipped cream, chocolate shavings, or fresh berries for a delightful touch. This dessert pairs beautifully with Milk Toast or can be enjoyed alongside a cup of espresso for a perfect end to your meal.

Storage & Reheating

Store any leftover mousse in an airtight container in the refrigerator for up to 3 days. To maintain its airy texture, avoid stirring when serving from the container. Do not freeze, as the mousse's texture will change upon thawing.

Frequently Asked Questions

Can I make this mousse ahead of time?

Yes, this mousse can be prepared a day in advance. Just remember to cover the parfait glasses with plastic wrap to prevent absorbing any odors from the fridge.

What can I substitute for coffee?

You can use brewed espresso, or for a non-caffeinated option, try warm milk or a milk alternative to achieve creaminess without the coffee flavor.

Is it safe to use raw eggs in this recipe?

Using raw eggs does pose a risk of foodborne illness. To minimize this risk, use pasteurized eggs or cook the egg yolks gently over a double boiler before incorporating them into the mousse.
