Diabetic Mini Cornbread Muffins

Ingredients

  • 1 1/2 cups yellow cornmeal
  • 1/3 cup coconut flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3 g stevia
  • 2 3/4 cups almond milk
  • 12 ounces diet Dr. Pepper soda

Instructions

  1. Preheat oven 350.
  2. Combine dry ingredients in a small bowl add wet.
  3. Mix until all ingredients are wet. Do not over mix!
  4. Grease mini muffin pan and use 1/4 cup to fill.
  5. Bake 15-20 minutes or until golden brown.
  6. Leftover can be frozen!
