Ingredients

  • 8 tortillas
  • 3 cups shredded chicken
  • 1 can diced green chiles
  • 1 can cream of chicken soup
  • 1/2 can cream of chicken soup (reserved)
  • 1 can diced black olives
  • 2 cups shredded Cheddar cheese

Instructions

  1. Mix shredded chicken, diced green chiles, cream of chicken soup, 1/2 cup shredded Cheddar cheese, and sour cream in a bowl.
  2. Fill each tortilla with the chicken mixture, then place rolled tortillas in a baking dish.
  3. Top the assembled enchiladas with the remaining 1/2 cup shredded Cheddar cheese, the reserved cream of chicken soup, and diced black olives.
  4. Bake at 350°F (175°C) for 30 minutes until heated through and bubbly.
