Ingredients

  • 6 to 8 medium carrots
  • 1 cup vinegar
  • 1 cup water
  • 3/4 cup sugar
  • 1 tablespoon mustard seed

Instructions

  1. Peel the carrots.
  2. Cut the carrots into 3-inch lengths.
  3. Quarter each piece lengthwise into sticks.
  4. Cook in boiling salted water for about 10 minutes, until just crispy tender.
  5. Drain the carrots and let them cool slightly before serving.
