Ingredients

  • 6 lb. small, hard green tomatoes, sliced
  • 2 doz. celery ribs, cut into strips
  • 3 large green peppers, cut into strips
  • 12 to 14 garlic cloves
  • pickling spice
  • 1 gal. vinegar
  • 5 qt. water
  • 2 1/2 c. salt
  • 2 boxes dill seed or 12 fresh dill heads

Instructions

  1. Sterilize 12 to 14 pint jars and set aside.
  2. Wash and slice the green tomatoes into small pieces.
  3. Cut the celery ribs into strips.
  4. Cut the green peppers into strips.
  5. Peel and crush 12 to 14 garlic cloves.
  6. Prepare pickling spice mixture according to your preference or recipe.
  7. Combine vinegar, water, salt, and pickling spice in a large pot and bring to a boil.
  8. Pack the sliced tomatoes, celery, green peppers, garlic, and dill into the prepared jars.
  9. Pour the hot vinegar brine over the filled jars, leaving appropriate headspace.
  10. Seal the jars with sterilized lids and process in a boiling water bath if necessary.
