Ingredients

  • 1 lb. green beans
  • 8 oz. yellow squash
  • 1/4 c. reduced-fat sour cream
  • 2 Tbsp. chopped fresh dill
  • 2 Tbsp. lemon juice
  • 1/4 tsp. salt
  • 1/8 tsp. pepper

Instructions

  1. Trim ends from green beans.
  2. Cut yellow squash into matchstick-sized pieces about 3 inches long.
  3. Cook green beans in a small amount of lightly salted boiling water in a covered saucepan for 3 minutes.
  4. Add squash to the saucepan.
  5. Cook for 2 minutes longer or until beans are tender.
  6. Drain well.
