Ingredients

  • 2 1/2 cups cake flour
  • 1 2/3 cups sugar
  • 1 1/4 teaspoons baking powder
  • 1 1/4 teaspoons baking soda
  • 1 teaspoon salt
  • 2/3 cup shortening
  • 2/3 cup buttermilk
  • 3 bananas
  • 3 eggs
  • 2/3 cup nuts

Instructions

  1. Sift together into a bowl the cake flour, sugar, baking powder, soda, and salt.
  2. Add shortening, one-third of the buttermilk, and bananas; beat at medium speed for 2 minutes.
  3. Add the remaining buttermilk and eggs; beat for 2 minutes more.
  4. Fold in nuts gently.
  5. Pour the batter into prepared pans, either 9-inch or 13 x 9 1/2-inch.
  6. Bake in a 350°F oven for 35 minutes if using 9-inch pans, or 45 minutes for 13-inch pans, until a toothpick inserted in the center comes out clean.
