Ingredients

  • 2 lb. pan-dressed trout
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 cup butter
  • 2 tsp. dill weed
  • 3 Tbsp. lemon juice

Instructions

  1. Clean, wash, and dry the fish.
  2. Cut the fish almost through lengthwise and spread open.
  3. Sprinkle the fish with salt and pepper.
  4. Melt butter in a frypan.
  5. Add dill weed to the butter.
  6. Place the fish in a single layer, flesh side down, in the hot dill butter.
  7. Fry at moderate heat for 2 or 3 minutes.
  8. Turn the fish over.
  9. Fry for another 2 or 3 minutes until the fish flakes easily.
  10. Place the cooked fish on a platter and keep warm.
  11. Turn the heat very low and stir in lemon juice.
  12. Pour the lemon‑dill sauce over the fish.
