Instructions
- Clean, wash, and dry the fish.
- Cut the fish almost through lengthwise and spread open.
- Sprinkle the fish with salt and pepper.
- Melt butter in a frypan.
- Add dill weed to the butter.
- Place the fish in a single layer, flesh side down, in the hot dill butter.
- Fry at moderate heat for 2 or 3 minutes.
- Turn the fish over.
- Fry for another 2 or 3 minutes until the fish flakes easily.
- Place the cooked fish on a platter and keep warm.
- Turn the heat very low and stir in lemon juice.
- Pour the lemon‑dill sauce over the fish.
