Double-Crumb Apple Pie

Ingredients

  • Crumb:
  • 1 1/4 cup flour
  • 1/3 cup rolled oats
  • 1/4 teaspoon salt
  • 1/2 cup light brown sugar
  • 2 teaspoon cinnamon
  • 1/2 cup butter (softened but not melted)
  • Filling:
  • 2 pounds apples (peeled, cored and sliced thinly)

Instructions

  1. Heat over to 350. Prepare pie crust. In large bowl combine flour, oats, sugar, cinnamon and salt. Cut in butter. Squeeze handfuls to form large crumbs.
  2. In another large bowl, toss apples with sugar, flour and cinnamon.
  3. Spoon apple mixture into pie crust. Sprinkle crumb mixture over apples. Put pie on baking sheet. Bake 1 and 1/4 hours until apples are tender and crumbs golden brown. If crumbs become too brown, place 4" square of foil over middle of pie for remaining bake time. Cool on wire rack. Dust with confectioner's sugar.
