Double Pumpkin Pies

Ingredients

  • 6 eggs
  • 2 c. brown sugar
  • 2 c. sugar
  • 4 Tbsp. all-purpose flour
  • 2 tsp. nutmeg
  • 2 tsp. pumpkin pie spice
  • 4 c. sweet potatoes
  • 1 1/3 c. evaporated milk
  • 1 tsp. salt

Instructions

  1. In a large bowl, beat the eggs until well beaten. Add the brown sugar and blend well. In a separate bowl, sift together the sugar, flour, nutmeg and pumpkin pie spice, so the spices won't by lumpy. Add the sugar and spices to the egg mixture. Blend the mixture into the pumpkin. Add the milk and salt. Turn the filling into the pie shells. Bake in 400° oven for 10 minutes; reduce the heat to 300° and bake until a knife inserted in the center comes out clean.
