Double Quick Yeast Rolls

Ingredients

  • 1 c. warm water (not hot, 110~ to 115~)
  • 1 pkg. active dry yeast
  • 2 Tbsp. sugar
  • 2 1/4 c. all-purpose flour
  • 1 tsp. salt
  • 1 egg
  • 2 Tbsp. soft shortening

Instructions

  1. In large bowl, dissolve yeast in warm water.
  2. Measure flour. Stir sugar, half of flour and salt into yeast.
  3. Beat with spoon until smooth; add egg and shortening.
  4. Beat in rest of flour until smooth.
  5. Scrape sides of bowl and cover with cloth.
  6. Let rise in warm place (85°) until double, about 30 minutes.
  7. Grease 12 large muffin cups.
  8. Stir down raised dough.
  9. Spoon into muffin cups 1/2 full.
  10. Again let rise in a warm place until dough reaches top of muffin cups, 20 to 30 minutes.
  11. Heat oven to 400°.
  12. Bake 15 to 20 minutes.
  13. Makes 12 rolls.
