Double Swiss Potatoes

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon butter
  • 1 onion, diced
  • 1 potato, sliced extremely thin
  • 1 bunch swiss chard, washed and chopped
  • 2 -4 slices swiss cheese
  • 1 -2 tablespoon fresh basil, minced

Instructions

  1. Heat oil and butter in a large saute pan over medium.
  2. Add onions and cook til translucent.
  3. Add potatoes, mix well and cover with a lid.
  4. Let onions start to caramelize and potatoes soften-about 10 minutes.
  5. Add swiss chard to the pan without mixing and cover with lid again, allowing the chard to steam.
  6. After about 5 minutes mix the contents of the pan, recovering and letting cook another 10 minutes, stirring occasionally.
  7. Remove lid and season with the fresh basil, salt and pepper.
  8. Mix and cover the top with slices of swiss cheese allowing it to sit a minute to melt.
  9. Serve casserole style.
