Double Swiss Potatoes

- Heat oil and butter in a large saute pan over medium.
- Add onions and cook til translucent.
- Add potatoes, mix well and cover with a lid.
- Let onions start to caramelize and potatoes soften-about 10 minutes.
- Add swiss chard to the pan without mixing and cover with lid again, allowing the chard to steam.
- After about 5 minutes mix the contents of the pan, recovering and letting cook another 10 minutes, stirring occasionally.
- Remove lid and season with the fresh basil, salt and pepper.
- Mix and cover the top with slices of swiss cheese allowing it to sit a minute to melt.
- Serve casserole style.
