Ingredients

  • 1 to 2 cups assorted dried fruit (peaches, prunes, apricots, apples, dates, pears, etc.)
  • 2 cinnamon sticks
  • 6 cups water
  • honey
  • cashew nuts

Instructions

  1. Place dried fruit, cinnamon sticks, and water in a large saucepan. Bring to a boil, then reduce to a moderate simmer.
  2. Cook until the water is absorbed by the fruit.
  3. Stir in honey to taste.
  4. Combine cashew nuts and water to cover in a blender.
  5. Blend until the cashews are a whipped cream consistency, adding water or nuts as needed.
  6. Place the cooked fruit in serving bowls and top with a big dollop of cashew whipped cream.
  7. Serve warm or cold.
