Ingredients

  • 2 (1 lb. size) cans small whole beets, drained
  • 2 onions, sliced thin
  • 1/2 cup sugar
  • 1/2 cup vinegar
  • 1/2 cup beet juice
  • 2 bay leaves
  • a few whole cloves

Instructions

  1. Combine sugar, vinegar, beet juice, bay leaves, and cloves in a saucepan.
  2. Bring the mixture to a boil.
  3. Pour the hot mixture over the drained beets and sliced onions.
  4. Cover and chill until ready to serve.
