Dry-Fried Green Beans

Ingredients

  • 1 lb fresh green beans
  • 2 tablespoons oil
  • 1/4 cup walnuts, coarsely chopped
  • 1 teaspoon dried chili pepper flakes
  • salt and pepper

Instructions

  1. Wash green beans and dry thoroughly. Snap off stems.
  2. Heat oil in large skillet or wok over medium high heat until almost at the smoking point.
  3. Add the dry beans to the hot oil and stir-fry until the beans start to get some dark brown spots.
  4. Add the walnuts and continue to stir-fry to cook all sides of the beans and toast the nuts.
  5. Sprinkle on the chili flakes and toss to distribute evenly.
  6. Remove from heat, salt and pepper to taste.
