Ingredients

  • 6 large green tomatoes
  • 1 egg
  • 1/2 cup bread crumbs
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 teaspoon pepper

Instructions

  1. Cut the green tomatoes into 1/2-inch thick slices and soak in cold salted water for 1 hour.
  2. Beat the egg in a small dish.
  3. Mix the bread crumbs, salt, sugar, and pepper in another small dish.
  4. Dip the tomato slices in the beaten egg, then dredge in the crumb mixture.
  5. Fry in margarine until lightly browned.
