Ingredients

  • 3 potatoes
  • 2 cup potato water
  • 1 cup compressed yeast
  • 2 tablespoon shortening
  • 2 tablespoon sugar
  • 1 tablespoon salt
  • 6 to 6 1/2 cup flour, sifted

Instructions

  1. Peel and dice the potatoes; cover with three inches of water and cook until tender, saving 2 cups of potato water.
  2. Mash the cooked potatoes in the reserved liquid or blend in a food processor to create a smooth mixture.
  3. Dissolve the compressed yeast in warm potato water or a little warm water, then combine with the mashed potatoes, shortening, sugar, salt, and flour.
  4. Knead the mixture until smooth and elastic, then allow it to rise until doubled in size.
  5. Shape the dough into loaves, place in greased pans, and let rise again until puffy.
  6. Bake in a preheated oven at 375°F (190°C) until golden brown, about 30-35 minutes.
