- Slice bacon and fry until crisp.
- Add chopped onion and diced tart apple to the bacon and cook until done.
- Add sauerkraut to the skillet and top with smoked sausage.
- Simmer for 15 minutes to allow flavors to meld.
- Prepare mashed potatoes separately.
- Just before serving, drain excess liquid from the sauerkraut mixture.
- Remove the sausage from the skillet and add the mashed potatoes to the sauerkraut mixture.
- Mix well and serve with the sausage.
