Ingredients

  • 6 slices bacon
  • 1 large onion
  • 1 tart apple
  • Mashed potatoes (4 to 6 servings worth)
  • Smoked sausage

Instructions

  1. Slice bacon and fry until crisp.
  2. Add chopped onion and diced tart apple to the bacon and cook until done.
  3. Add sauerkraut to the skillet and top with smoked sausage.
  4. Simmer for 15 minutes to allow flavors to meld.
  5. Prepare mashed potatoes separately.
  6. Just before serving, drain excess liquid from the sauerkraut mixture.
  7. Remove the sausage from the skillet and add the mashed potatoes to the sauerkraut mixture.
  8. Mix well and serve with the sausage.
