Ingredients

  • 3 cups baby arugula
  • 1 cup sun-dried tomatoes
  • 1 cup bocconcini
  • 1 cup smoked mozzarella, cut into bite-sized pieces
  • 1 cup marinated mushrooms, cut into bite-sized pieces
  • 1 cup marinated eggplant, cut into bite-sized pieces
  • 1 cup sliced bell pepper

Instructions

  1. Cover a large serving platter with arugula. Top with remaining ingredients.
  2. Serve with ciabatta.
