Ingredients

  • 1 can chicken or beef broth
  • 1 can water
  • 1 can beets with juice, sliced or cut
  • 2 Tbsp. flour
  • 1 cup sour cream
  • salt and pepper to taste

Instructions

  1. Mix broth, water, and beets in a saucepan.
  2. Bring to a boil, then lower heat.
  3. Simmer for 15 minutes.
  4. Blend flour and sour cream together.
  5. Pour some hot soup into the cream mixture to warm it.
  6. Pour the warmed mixture back into the soup.
  7. Simmer for an additional 5 minutes.
  8. Season with salt and pepper.
  9. Serve over boiled potatoes or noodles, or with bread and butter.
