Ingredients

  • 1 c. Italian dressing
  • 8 medium zucchini (about 2 1/2 lb.), cut into thin strips
  • 4 c. coarsely chopped tomatoes
  • 4 c. cauliflowerets
  • 2 c. thin diagonally sliced celery
  • 1/4 tsp. crushed red pepper (optional)
  • grated Parmesan cheese

Instructions

  1. In a large Dutch oven, combine all ingredients except cheese.
  2. Simmer, covered, stirring occasionally, for 20 minutes or until vegetables are tender.
  3. Serve with grated Parmesan cheese on top.
