Ingredients

  • 1 (20 oz.) can sliced pineapple in its own juice
  • 1/2 cup butter or margarine
  • 1 cup firmly packed brown sugar
  • 1/2 cup pecan halves
  • 1/2 cup shredded coconut (optional)
  • Maraschino cherries, halved (optional)
  • 1 (18 oz.) package yellow cake mix

Instructions

  1. Drain the pineapple, reserving the juice.
  2. Preheat oven to 350°F (175°C). Melt butter in a 13 x 9-inch baking dish.
  3. Remove the dish from oven and sprinkle with brown sugar, pecan halves, shredded coconut (if using), and halved maraschino cherries (if using).
  4. Arrange the pineapple slices on top of the sugared mixture.
  5. Pour water into the reserved pineapple juice to make the liquid amount specified on the cake package.
  6. Prepare the yellow cake mix according to the package instructions, using the pineapple juice mixture as part of the liquid.
  7. Spread the prepared batter evenly over the fruit.
  8. Bake for 35 to 40 minutes or until tests done.
  9. Cool for 5 minutes, then invert onto a large serving dish to serve.
