  1. Mix all ingredients and beat well for 8 to 10 minutes.
  2. Put 2 cups of batter in another bowl and mix with half of the instant chocolate pudding.
  3. Pour half of the pistachio mixture into a greased and floured Bundt pan.
  4. Pour the chocolate mixture into the pan after the pistachio layer.
  5. Add the remaining pistachio mixture on top.

Tips & Substitutions

For a lighter cake, consider substituting the oil with unsweetened applesauce. If you prefer a nutty flavor, add crushed pistachios to the batter. Ensure your eggs are at room temperature for better emulsification. You can also use a different flavor of instant pudding if desired; vanilla or caramel could work well in place of chocolate.

Serving Suggestions

This pistachio cake is delightful when paired with a scoop of vanilla ice cream or a dollop of whipped cream. It also pairs beautifully with Joanne'S Sugar Coated Pecans for added crunch. Serve it at gatherings or as a sweet ending to a meal, and it’s sure to impress your guests.

Storage & Reheating

Store leftover cake in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate it for up to a week. To reheat, slice the cake and microwave it for about 10-15 seconds, or enjoy it cold for a refreshing taste.
