Easy Red Cabbage Soup

Ingredients

  • 1 tablespoon vegetable oil
  • 2 medium onions diced
  • 1 small red cabbage cored and shredded
  • 1 1/2 quart chicken broth
  • 3 tablespoons white wine vinegar
  • 1 each ham hock
  • 1 x salt to taste
  • 1 x black pepper to taste
  • 1 x sour cream
  • 1 x dill weed fresh

Instructions

  1. In a large soup pot, heat the oil and cook the onions, stirring occasionally, until softened, about 10 minutes.
  2. Add the cabbage and continue to cook, stirring occasionally, about 20 minutes.
  3. Add the chicken broth, vinegar and ham hock.
  4. Cover and simmer the soup for 1 hour.
  5. Remove from heat, add salt and pepper as desired.
  6. Remove meat from ham hock and add back to soup.
  7. Serve with sour cream and chopped fresh dill.
