Ingredients

  • 1 1/2 lb. veal round steak or cutlets
  • 2 eggs
  • 2 Tbsp. water
  • 2 c. packaged instant mashed potatoes
  • 1/2 c. grated Parmesan cheese
  • 1/4 tsp. salt
  • 1/3 c. Crisco

Instructions

  1. Cut the veal into 6 serving-sized pieces and pound to 1/8-inch thickness.
  2. Cut small slits in the fat edges to prevent curling.
  3. Combine eggs and water in a bowl.
  4. Stir together the dry instant mashed potatoes, Parmesan cheese, and salt.
  5. Dip each veal piece into the egg mixture, then into the potato mixture; repeat to give a second coating.
  6. In a skillet, brown the veal in hot Crisco for 3 minutes on each side.
