Ingredients

  • 8 slices bacon
  • 2 c. frozen loose-pack hash brown potatoes
  • 6 beaten eggs
  • 2 Tbsp. milk
  • 1/2 c. sharp Cheddar

Instructions

  1. Cut bacon into 1-inch pieces.
  2. Cook bacon in a skillet until crispy, then remove and set aside.
  3. Add hash brown potatoes to the skillet and cook until browned and cooked through.
  4. In a bowl, beat eggs with milk.
  5. Pour the beaten eggs over the hash browns in the skillet.
  6. Scramble the eggs until just set.
  7. Sprinkle shredded Cheddar over the eggs and bacon.
  8. Allow the cheese to melt before serving.
