Easy Upside-Down Cake

Ingredients

  • 1 (20 oz.) can pineapple slices in syrup
  • 1/4 cup margarine
  • 2/3 cup brown sugar, packed
  • 10 maraschino cherries
  • 1 (16 oz.) package pound cake mix

Instructions

  1. Drain pineapple slices, reserving 3/4 cup of syrup.
  2. Melt margarine in an ovenproof pan such as an iron skillet.
  3. Blend in the brown sugar and remove from heat.
  4. Arrange pineapple slices in the mixture in the pan.
  5. Place a cherry in the middle of each pineapple hole.
  6. Prepare the pound cake mix according to package instructions, replacing the milk with the reserved pineapple syrup.
  7. Pour the batter over the pineapple in the pan.
  8. Bake in a 350°F oven for 45 to 50 minutes until the cake tests done.
  9. Cool for 5 minutes.
  10. Invert the cake onto a serving plate.
  11. Serve warm.
