- Beat the egg whites at low speed for 20 minutes until they are raised and frothy.
- Gradually add sugar, one tablespoon at a time, while continuing to beat.
- Add vanilla extract last and mix well.
- Using a tablespoon, place meringue dollops one inch apart on a baking sheet.
- Bake at 250°F (120°C) for 1 hour.
- Optional: Add 2 to 3 drops of food color to the meringue mixture before baking.
