Effortless Enchiladas

Ingredients

  • 12 corn tortillas
  • 1 can cream of chicken soup
  • 1 (7 oz.) can green chiles
  • 1 red pepper, chopped
  • 2 c. sour cream
  • 3 lb. cooked chicken/turkey
  • 3/4 lb. Monterey Jack, shredded

Instructions

  1. In medium bowl, combine soup, chiles, red pepper and sour cream.
  2. Whisk well.
  3. Separate and set aside 1 cup.
  4. Mix chicken/turkey into remaining mix in medium bowl.
  5. Spoon 2 tablespoons of mix at each end of tortilla.
  6. Sprinkle each with cheese.
  7. Roll up and arrange in a shallow baking dish just large enough to hold enchiladas in single layer.
  8. Pour remaining cup of sour cream mix over enchiladas.
  9. Sprinkle with cheese.
  10. Bake at 350° for 30 minutes.
