Effortless Enchiladas

Instructions
- In medium bowl, combine soup, chiles, red pepper and sour cream.
- Whisk well.
- Separate and set aside 1 cup.
- Mix chicken/turkey into remaining mix in medium bowl.
- Spoon 2 tablespoons of mix at each end of tortilla.
- Sprinkle each with cheese.
- Roll up and arrange in a shallow baking dish just large enough to hold enchiladas in single layer.
- Pour remaining cup of sour cream mix over enchiladas.
- Sprinkle with cheese.
- Bake at 350° for 30 minutes.
