  2. 1. Process first 5 ingredients in a blender until frothy, stopping to scrape down sides.
  3. 2. Melt butter in a large heavy skillet over medium heat; reduce heat to medium-low.
  4. 3. Add egg mixture, and cook, without stirring, until mixture begins to set on bottom. Draw a spatula across bottom of skillet to form large curds.
  5. 4. Continue cooking until eggs are thickened but still moist; do not stir constantly.
  6. 5. Sprinkle with chives.
  7. Serving Size: 1/2 cup
