Egg White And Spelt Bread

Ingredients

  • 3 oz ground almonds
  • 3 oz ground flax seed
  • 4 tbsp wheat bran, plus 1-2 tbsp for sprinkling
  • 2 tbsp spelt flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 10 oz quark
  • 8 None medium egg whites
  • 2 tbsp pumpkin seeds

Instructions

  1. Preheat the oven to 350°F. Mix the ground almond, flax seed, wheat bran, flour, baking powder and salt together. Mix in the quark and egg whites and knead using a dough hook until smooth.
  2. Lightly rub a 10 inch loaf pan with water and sprinkle with wheat bran. Line the bottom of the pan with parchment paper. Transfer the bread dough to the pan and sprinkle with pumpkin seeds and sunflower seeds. Bake for 45-50 mins, until risen and golden.
  3. Remove the bread from the oven and allow it to rest for 10 mins. Loosen the bread from the edges and tip out of the pan before serving.
