Eggplant Meatballs

Ingredients

  • 1 eggplant, baked until soft, peeled and chopped
  • 2 lb. ground beef or turkey
  • 3 cloves garlic, smashed
  • 2 eggs
  • 1 tsp. basil
  • salt and pepper to taste

Instructions

  1. Mix all together; form into balls.
  2. Boil or fry.
  3. Drain grease.
  4. Place 1 cup of tomato sauce in the bottom of a baking dish.
  5. Put meatballs on top of sauce.
  6. Can be covered with Mozzarella and Parmesan cheese.
