Ingredients

  • 1/2 or more medium onion
  • 1 Tbsp. butter
  • raw potatoes, diced, or leftover mashed potatoes
  • 1 c. milk
  • 1 can cream of celery soup
  • 1 can cream of potato soup
  • 1 can water
  • salt and pepper

Instructions

  1. Saute onion in butter until soft, not brown.
  2. Add diced potatoes and milk to the pot.
  3. Cook for a few minutes until heated through.
  4. Add cream of celery soup, cream of potato soup, and water.
  5. Stir well, cook and stir until heated through and flavors meld.

Tips & Substitutions

For a creamier texture, use leftover mashed potatoes instead of diced ones. If you're short on time, consider using pre-diced frozen potatoes. You can also add vegetables like carrots or celery for extra flavor. Adjust the seasoning with herbs like thyme or parsley for a fresh touch. For a touch of heat, a dash of cayenne pepper works well.

Serving Suggestions

Serve this hearty potato soup with crusty bread or a side salad for a complete meal. It pairs beautifully with Granny Stephens Tea Cakes for dessert. You can also top the soup with shredded cheese, crumbled bacon, or fresh herbs for added flavor. A sprinkle of chives or green onions can enhance presentation.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, warm the soup gently on the stove over low heat, stirring occasionally. If the soup thickens too much, add a splash of milk or water to reach your desired consistency.
