"Everything Nice" Pecans

Ingredients

  • 2 egg whites
  • 1/2 tsp. vanilla extract
  • 1 cup sugar
  • 1 1/2 cups light brown sugar
  • 1/2 tsp. ground cinnamon
  • 2 cups pecan halves

Instructions

  1. Combine stiffly beaten egg whites and vanilla extract in a bowl.
  2. Mix sugar, light brown sugar, and ground cinnamon together in a separate bowl.
  3. Add the dry sugar mixture to the egg whites and vanilla, and mix well.
  4. Gently stir in the pecan halves to coat each pecan with the mixture.
  5. Using a fork, individually remove coated pecans and place them on a greased baking sheet.
  6. Bake at 250 degrees Fahrenheit for about 20 minutes.
  7. Allow to cool completely before storing in an airtight container.
