- Combine stiffly beaten egg whites and vanilla extract in a bowl.
- Mix sugar, light brown sugar, and ground cinnamon together in a separate bowl.
- Add the dry sugar mixture to the egg whites and vanilla, and mix well.
- Gently stir in the pecan halves to coat each pecan with the mixture.
- Using a fork, individually remove coated pecans and place them on a greased baking sheet.
- Bake at 250 degrees Fahrenheit for about 20 minutes.
- Allow to cool completely before storing in an airtight container.
