Eve'S Roll Cake

Ingredients

  • 2 eggs
  • 1/2 c. sugar
  • 1/2 c. oil
  • 1 tsp. vanilla
  • 1/2 c. orange juice
  • 2 to 2 1/2 c. flour
  • 2 tsp. baking powder
  • peach, plum or apricot jam
  • white raisins
  • chopped walnuts

Instructions

  1. Preheat oven to 375°.
  2. Beat the eggs and combine with the sugar, oil, vanilla and orange juice.
  3. Add flour until the mixture forms a dough.
  4. Add baking powder.
  5. Roll into a ball and chill one hour in refrigerator.
  6. Divide dough into thirds.
  7. Roll out 1/3 onto a floured cloth.
  8. Spread with jam and sprinkle on raisins, walnuts and cinnamon.
  9. Roll into a log shape and roll onto a greased cookie sheet.
  10. Repeat with the remaining 2/3 of dough. Sprinkle all three with cinnamon and bake for about 25 minutes.
