Fan Potatoes are visually appealing baked potatoes with crispy edges and flavorful herb butter, perfect as a comforting side dish or impressive vegetarian main.

Ingredients

  • 6 baking potatoes
  • 3 Tbsp. water
  • 2 Tbsp. butter or margarine
  • 1 Tbsp. chives
  • 1 tsp. basil
  • 1/4 tsp. tarragon
  • 1/4 tsp. black pepper
  • Salt to taste (optional)

Instructions

  1. Preheat oven to 425°F.
  2. Lightly oil a baking dish large enough to hold the potatoes.
  3. Make several slices 1/4 inch apart lengthwise along each potato, stopping 1/4 inch from the bottom, using a wooden spoon as a guide to prevent cutting through.
  4. Heat water, butter, chives, basil, tarragon, and black pepper until the butter melts.
  5. Brush the herb butter mixture over the sliced potatoes.
  6. Bake the potatoes for 1 hour, basting every 15 minutes with pan liquid.
