- Place a layer of unpeeled tomatoes in a shallow bowl (8-inch diameter).
- Top with a layer of thinly sliced onion, then on top of this, sprinkle a pinch of salt, sugar, black pepper and basil with a tablespoon of olive oil and vinegar.
- Cover and refrigerate several hours before serving. This is well worth having on hand for summer meals.
