Ingredients

  • 6 to 8 medium potatoes
  • 1 small onion
  • 1 clove garlic
  • evaporated skim milk
  • pepper

Instructions

  1. Put onion and garlic in a cooking pan with potatoes.
  2. Add enough water to cover potatoes.
  3. Bring to a boil.
  4. Simmer for 30 to 35 minutes or until potatoes are tender.
  5. Remove the onion and garlic.
  6. Drain the potatoes in a colander until thoroughly drained.
  7. Pat dry, if necessary, to remove excess moisture.
  8. Cut potatoes into chunks and mash by hand or use an electric mixer.
  9. Mash potatoes until free of lumps.
  10. Add the desired amount of evaporated skim milk and whip until creamy.
  11. Season with pepper to taste.
