Favorite Fish Chowder

Ingredients

  • 1 large onion, chopped
  • 1/2 c. butter or margarine
  • 4 c. water
  • 6 c. peeled and diced potatoes
  • 2 lb. fresh or frozen cod fillets, cut in large chunks
  • 3 Tbsp. lemon juice
  • 2 c. milk
  • 2 1/2 tsp. salt
  • 2 tsp. pepper
  • 2 (12 oz.) cans evaporated milk

Instructions

  1. In Dutch oven or soup kettle, saute onion in the butter.
  2. Add water and bring to a boil.
  3. Add potatoes; cook 10 minutes.
  4. Add fish and lemon juice.
  5. Reduce heat and simmer for 10 minutes.
  6. Add milk, evaporated milk, salt and pepper.
  7. Garnish with parsley and serve piping hot.
