Favorite Pumpkin Squares

Ingredients

  • 2 c. canned pumpkin
  • 1 c. sugar
  • 1 tsp. salt
  • 1 tsp. ginger
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1 c. toasted pecans
  • 1/2 gal. vanilla ice cream, softened
  • 36 gingersnaps
  • whipped cream for garnish (optional)

Instructions

  1. Combine
  2. pumpkin,
  3. sugar and spices.
  4. Add pecans.
  5. In a chilled
  6. bowl,
  7. fold
  8. pumpkin
  9. mixture
  10. into
  11. ice cream.
  12. Line bottom of 13
  13. x 9 x 2-inch pan with half the gingersnaps.
  14. Top with half
  15. the ice cream mixture.
  16. Repeat. Freeze until firm, about 5 hours.
  17. Cut in squares, garnish with whipped cream and pecan halves, if desired.
  18. Makes 18 servings.
