Ingredients

  • 1 3/4 cups sugar
  • 10 eggs
  • 1 1/2 cups peach nectar
  • 1/4 cup orange juice concentrate
  • 2 teaspoons vanilla
  • 1 teaspoon grated orange peel
  • 2 1/2 cups milk

Instructions

  1. In a heavy saucepan on medium heat, cook 3/4 cup of sugar, stirring constantly, until melted and golden brown.
  2. Immediately pour the caramelized sugar into a greased 2-quart casserole flan pan and tilt to coat the bottom evenly.
  3. In a large mixing bowl, whisk together 1 3/4 cups of sugar, 10 eggs, 1 1/2 cups of peach nectar, 1/4 cup of orange juice concentrate, 2 teaspoons of vanilla, and 1 teaspoon of grated orange peel until well combined.
  4. Gradually pour 2 1/2 cups of very hot (not boiling) milk into the egg mixture, stirring constantly to prevent curdling.
  5. Pour the custard mixture into the prepared flan pan over the caramelized sugar.
  6. Place the flan pan into a larger baking pan and add hot water to the larger pan to reach halfway up the sides of the flan pan.
  7. Bake in a preheated oven at 350°F (175°C) for approximately 45 minutes, or until the custard is just set and a knife inserted in the center comes out clean.
  8. Remove from the oven, let cool, then refrigerate for several hours or overnight before unmolding and serving.
