Festive Fruit Flan

- In a heavy saucepan on medium heat, cook 3/4 cup of sugar, stirring constantly, until melted and golden brown.
- Immediately pour the caramelized sugar into a greased 2-quart casserole flan pan and tilt to coat the bottom evenly.
- In a large mixing bowl, whisk together 1 3/4 cups of sugar, 10 eggs, 1 1/2 cups of peach nectar, 1/4 cup of orange juice concentrate, 2 teaspoons of vanilla, and 1 teaspoon of grated orange peel until well combined.
- Gradually pour 2 1/2 cups of very hot (not boiling) milk into the egg mixture, stirring constantly to prevent curdling.
- Pour the custard mixture into the prepared flan pan over the caramelized sugar.
- Place the flan pan into a larger baking pan and add hot water to the larger pan to reach halfway up the sides of the flan pan.
- Bake in a preheated oven at 350°F (175°C) for approximately 45 minutes, or until the custard is just set and a knife inserted in the center comes out clean.
- Remove from the oven, let cool, then refrigerate for several hours or overnight before unmolding and serving.
